Allow to cool off. In a medium saucepan, stir the coconut milk, fresh cream, and sugar till smooth. Set aside so that the sugar may dissolve. Once the jelly has set: Add the gelatin mixture to the saucepan with the cream mixture. Stir well. Place on the stove and heat – till just beginning to boil. Place the cream, coconut milk and sugar in a sauce pan. Stir often until the sugar has dissolved. Remove from the heat and add the coconut extract. In a medium bowl place the gelatin and add the water. Stir well until combined. Add the coconut milk mixture to the gelatin and stir well. Using cooking spray, grease 6 ramekins & set aside. Let this sit 3-5 minutes. In a saucepan placed over medium heat, combine the cream of coconut, coconut cream and sugar. Bring to a boil, stirring constantly. Once the coconut cream mixture begins to bubble, whisk in the gelatin mixture, stirring until dissolved. Cook milk mixture an additional minute. Add 2 cups of mixed berries (raspberries, red currant, black currant, and blackberries) to a saucepan. Add half a cup of sugar and half a cup of water. Add the passionfruit juice. Bring the mixture to a boil again. Boil for 1 minute, then chill until serving time. SERVING: To unmould the panna cottas (optional), fill a dish with hot (not boiling) water just an inch or so, then sit the moulds into the warm water for 20-30 seconds. 200 ml heavy cream, 6 g Agar-Agar powder, 1 cinnamon stick, 2 cloves, 2 tbsp sugar, 200 ml full fat milk.
