You can just go to the in-game menu for the skills tab and reset your skill points by pressing Y or triangle depending on which console you are playing on. The yellow one above the health which decreases everytime you parry their attacks. Once the yellow bar is fully depleted, hit them with a heavy attack and you should trigger the finisher.
